When you’re starving after a day-long trip around Ithaca, a hearty portion of comfort food such as a plate full of pasta covered in thick homemade sauce sounds pretty good, right?
“It’s certainly one of my favorite foods to eat,” says Shawn Edwin, general manager at Pasta Vitto, a new Italian restaurant that opened in October 2018 on the Commons. And, lucky for Shawn, Pasta Vitto serves — you guessed it — plates filled with spaghetti that is loaded with sauce. Pasta Vitto also serves a variety of other Italian classics such as fettuccine alfredo, lasagna, beef and pork meatballs, and many Pizzettes (personal sized pizzas) options.
“Pasta Vitto has some of the best spaghetti I’ve ever tasted. I usually eat some of it during my shift. The sauce is so good,” says Shawn.
And, he would know a thing or two about cooking a great tasting sauce.
While growing up Waddington, NY, a small town near the St. Lawrence River, Shawn spent time prepping pasta sauce and other Italian dishes at his grandfather’s restaurant Defazio’s Towne Home.
“I truly enjoy working in the food and beverage industry… I moved to Ithaca after graduating from college because I wanted to work in the wine industry in the Finger Lakes. I’m so proud of our restaurant Finger Lakes focused bar. We promote New York State beers, wines and spirits with an emphasis on serving products that are local. We use four New York State spirits for our well pour, something that is unheard of in most restaurants,” says Shawn.
When Shawn isn’t busy monitoring operations at Pasta Vitto, he can typically find him hanging out with his three dogs, hiking all over the Finger Lakes, sampling area wines, beers, and spirits, or enjoying all the great things the downtown community has to offer. “There’s always something different going on in the Commons on a daily basis. You never know what you’ll see,” says Shawn.
